Recipe for Rice Dishes – Spinach Cheese Rice
Ingredients:
Spinach leaves washed and drained 1 bunch
Grated cheese 1/2 cup
Basmati rice 1 ½ cups
Green chillies 5
Ginger 1''
Onion slice into thin long strips 1
Dalchini (cinnamon)- clove powder ½ tea spoon
Cabbage thinly chopped 1 cup
Lemon Juice 1
Milk ¼ cup
Butter 1 tbsp
Salt to taste
Procedure:
Boil plenty of water. After consistently hot add required amount of salt, 8-10 drops lemon juice and rice. Cook till the rice is almost tender. Drain in a colander followed by spreading on a thali or plate allowing it to cool. Keep aside.
Grind spinach, green chillies and ginger without adding any water since the sustained water is sufficiently enough.
Heat butter in kadahi (pan) adding the onions and spice powder. Fry till light brown and then add cabbage, lemon juice, salt and spinach paste. Fry for 5 minutes.
Now add this fried masala to the rice leaving behind 1 tbsp mixture.
Add half cheese. Blend the masala with rice preferably with the fingers so that the grain does not break.
After evenly mixed transfer to a casserole. Delicately spread the leftover paste on the rice along with sprinkling the remaining cheese and milk.
Cover with a foil or cling film depending on the oven's requirement and bake for 15 minutes.
Serve hot. |
