Non Vegetarian Recipe – Chicken Cafreal
There are a few regions in India which has have a repute when it comes to non-vegetarian dishes. Goa, one such region, is more famous for sea food. However, Chicken Cafreal is as exotic as the sea food of Goa. Cafreal is essentially whole or jointed chicken marinated in chillies, spices and lime juice or vinegar. Then the chicken is either deep fried, barbecued or roasted.
Ingredients:
1 chicken, cut in pieces
2 limes' juice
1 level tsp salt
Grind to paste
5 kashmiri chillies
3 green chillies, de-seeded
4 peppercorns
1 tbsp corriander seeds
1/2 inch piece cinnamon bark
1/2 inch piece mace
8 cloves garlic
1 inch piece ginger
Preparation:
If you are cooking the chicken in pieces then rub the salt and lime juice over the chicken. If you are cooking it whole then rub it inside as well.
Rub the ground ingredients all over the chicken.
Let the chicken marinate over night in the fridge.
Take it out next morning for roasting.
Heat the oven to 325oC.
Place the chicken in a roasting tray and cover with foil (this is important - the chicken must be moist when done and the spices must not burn).
Cook it for about 2 hrs (when it's 2 kgs.)
Baste the chicken several times during cooking.
Remove the foil for the last 15 minutes of cooking.
When it's done, remove the chicken from the roasting tray.
To make the gravy, collect the pan juices make a gravy as normal. If there is fat in the juices, do not skim it off. |
