Indian Dessert Recipe – Coconut Burfi
Talk of sweets and you will get any Indian drooling. But the funny thing is that each of them will be thinking of a different delicacy. Each region and corner of India sweet items that are peculiar to it. However, coconut burfi is more of a cosmopolitan Indian dessert enjoyed across India. Here's a simple recipe to make the perfect coconut burfi.
Ingredients:
Coconut scrapped 2 cups
Coconut coarsely shredded 1 cup
Yellow colour 5-6 drops
Saffron soaked in 1 tbsp warm water 8-10 strands
Sugar 1 1/2 cups
Milk 1 cup
Ghee 1 tbsp.
Cardamom powder 1/4 tsp.
Procedure:
Mix scrapped and shredded coconut in a large heavy pan.
Cook the mixture in milk till bubbles appear
Stir continuously while you cook.
Add saffron water, colour and cardamom
Boil sugar in 1/2 cup water to make 2-1/2 thread syrup.
Pour the syrup into coconut as you stir gently and continuously.
Add 1 tbsp. ghee and continue stirring, till a soft lump is formed.
Grease a large flat plate and empty the mix onto it.
Pat it gently to one inch thickness.
Cool and cut it into squares.
Store in airtight containers and consume before two weeks.
Note: Be sure never to use the brown skin of the coconut. It discolours the burfi even though the taste will not differ much.
