Missi Roti
The different kinds of roti (Bread) made in different regions of India are widely varying. However, one of the most famous of all these varieties is Missi roti. This can be seen as the Indian version of multigrain bread. It's primarily a northern Indian food.
Ingredients:
1 1/2 cup all purpose soft-wheat flour (Atta)
1/4 cup chickpea flour (Besan). You can also try corn flour.
Pinch of salt.
2 Tablespoon of butter.
1/2 cup warm water.
Procedure:
Mix all the dry ingredients in a bowl and sift.
Knead this mix in warm water.
Add the butter while you knead.
Let the dough stand for about 1 hour.
Heat a flat griddle to medium temperature.
Divide the dough into golf sized balls of 1" diameter.
Now roll the ball into a flat round pancake of 6" diameter.
Transfer the pancake onto the griddle. Make sure that the girdle is neither too hot nor under-heated.
Let the roti cook by turning it on its sides every few minutes.
Change sides repeatedly so that it does not burn.
You will notice a steam bubble. Press it with a clean rag.
When it's cooked serve it hot with the thin side of the roti buttered. |
